Instructions
PREPARE SHORTCRUST
- Preheat oven to 370F
- iI a mixing bowl, combine all dry ingredients (flour cornstarch, sugar, vanilla, salt). Mix. Add black sesame past and mix with your hands.
- Slowly add milk (perhaps not all of it) until you get a dough that is compact.
- Grease a tart mould with detachable bottom, and place the dough in the center. Carefully press down towards the perimeter with your hands and fingers until you get a beautiful 5mm thick dough throughout the mould.
- Bake for 20min, take out and let cool down while you make the cream.
MAKE THE GREEN TEA CREAM
- In a saucepan, bring the NUTmilk (or rice milk) to a simmer. Add in the two green tea sachets and turn off the heat. Let cool down.
- In another saucepan, whisk COCONUTmilk, lemon zest, agar agar, vanilla and ginger powder and bring to a light boil. Then reduce to simmer and whisk continuously for another 2 minutes. turn off the heat.
- remove the tea sachets and combine the "tea milk" with coconut milk.
- This is the liquid cream you will lay over the cooled down tart. Then place in the fridge for 2 hours so it thickens.
FINISH THE TART
- Slice strawberries thinly and place over the cream on the tart.
- in a saucepan boil lemon juice, water and agave until it reduces to a syrupy liquid.
- Brush lemon syrup over the strawberries and sprinkle with black sesame seeds.
- Et voila!
