SEAFOOD CITRUS CRUDO with grapefruit & avocado segments
A refined appetizer to impress your guests on a summer dinner table, which requires no specific cooking skills and can be prepared in advance, so you have very little prep time before serving. A starter where ocean flavors meet sweet and zesty citrus finishes. With added tanginess from grapefruit segments and creaminess from delicate avocado slices.

- CUT GRAPEFRUIT IN SEGMENTS: With a sharp knife, chop off the grapefruit skin so you see no white skin anymore. then take out each segments and place on your serving platter. Reserve the juice that came out of it (for the dressing)
- ADD AVOCADO SLICES over the grapefruit segments on the plate.
- SLICE SEAFOOD THINLY: prepare "carpaccio style" slices of the seafood you choose to use. I recommend raw scallops for this dressing (although picture shows cooked shrimps). Carefully add the seafood slices over the grapefruit/avocado bites. Or alternate the three ingredients in a circle on the plate.
- PREPARE THE DRESSING : whisk together the olive oil, orange, lemon juice with zest, and grapefruit juice, until well emulsified. Gently pour over your plate.
- FINISH with a pinch of sea salt flakes, a few thin slices of jalapeño pepper and fresh leaves of cilantro
- NOTE: For a private chef dinner, I used this citrus dressing over raw seabass slices, to create a delicious seabass crudo. I finished my plate with fried shallots and cilantro, and a touch of sea urchin to add delicate seafood flavors. Incredibly tasty…
